wheat-free matzoh

Passover is upon us, and I know most of us are left out of partaking unleavened bread. This is a recipe my mother-in-law came up with last year. Everyone at the table actually liked it better than regular matzoh!

Please note... that this recipe is WHEAT-FREE and uses OATS.

Ingredients:
1 1/2 cups oat flour
1/2 cup potato starch
2 teaspoons salt
water
parchment paper

Preheat oven to 445 degrees
1. Mix dry ingredients together in a bowl.
2. Add 1 tablespoon of water and mix.
3. Keep adding tablespoons of water till the dough forms a ball.
4. Dough will be on the dry and stiff side.
5. Divide dough into 3 sections.
4. Put first section on parchment paper and roll out in a thin round.
5. Slip parchment with rolled dough on a baking sheet.
6. Repeat with other two sections of dough.
7. With a fork, prick small holes gently through dough to help prevent rising.
8. Place in oven for 12-15 minutes, until lightly toasted.
9. Let cool on rack. Wrap in wax paper and a plastic bag.
